Yummy roasted veggies |
My main diet consists of food that doesn't include meat or dairy. Like a vegan. I eat this way because I feel 10 times better, I believe it's a healthy way to live, and the bonus is, the meals are delicious. The word vegan is usually met by our friends and family recoiling in horror. People think you're mad! So I decided to do this blog (how original right?) to show the delicious vegan friendly meals we've managed to make to show we're not crazy and there's loads of options.

Roasted Vegetables
At the beginning, it was fair to say we felt a bit lost. We knew what we could eat, but neither of us really had any cooking flair, so we stuck to basics. We thought we would really notice the absence of the roast beef or roast chicken, but actually, we didn't. A plate full of lovely roasted vegetables is filling and tasty and satisfying, and I for one, felt a hell of a lot better afterwards.
